#3 Food

Today I am feeling tired and that’s ok. I plan on getting an early night and a big delicious sleep. For now I want to talk about food. I was thinking about what we could have for dinner, this morning as I do, and decided to take a look in the freezer. I took out a pack of sausages for tomorrow, not sure what I’m going to do with them yet, I’m sure inspiration will hit me at some point.

While I was doing a bit of a stocktake of what I have on hand, I came across two containers of bolognaise sauce and thought that they could be perfect reheated and served with whatever pasta I could find laying about. So that was that. I could have made lasagne as I have some frozen lasagne sheets but when your knackered, taking the easiest way out is a great idea. So I did.

Now I have a good idea of what I have in the freezer, the idea is to use it up in meals. This is good news for my food budget as it means less buying. So my ideas for meals and therefore my shopping list will be based around what I already have. I have loads of chicken. 2 lots of chicken breast, enough for one main meal each, plus a whole frozen chicken. I’m thinking of just roasting that and them I can do a chicken soup the day after with the leftovers. Some of the breast will be commandeered for my easy version of Thai Green Chicken curry. The other lot, I’m not sure about yet.

Also on New Years day some very dear friends came to visit for the day and with them came lots of food destined for my pantry and freezer. They are leaving for the other side of the country so couldn’t take it with them and I was a very enthusiastic recipient of their goodwill πŸ™‚ So my stores of frozen veg and meats have been added to! Bravo for amazing friends! So I also have some turkey mince, frozen broccoli and cauliflower florets and all sorts of things. due to various factors I haven’t done a proper menu plan for a few months and honestly I don’t like getting too full on about doing it because my natural inclination is to rebel against myself and just take the more spontaneous fly by the seat of my pants method, which is actually a lot more fun and doesn’t make it all seem like a chore, because life is for living and who doesn’t want to be happy? If I have an idea of what I have on hand I can usually make things without having to go and buy extra ingredients. My store cupboard aka pantry is pretty well stocked and so is my spice cupboard, so all is well.

I will need to shop for the basics like milk and bread and also some fresh fruit and veggies. Should be simple enough πŸ™‚

I haven’t decided on an easy sewing project yet. I’m planning on watching a few vids on youtube tonight before I fall asleep. I just enjoyed a lovely bubble bath. One of my fave ways to relax while watching youtube on my phone…bliss
