As I’m sure you are aware it is June. Well we’re a few days in and I’m still surprised 🙂 How did we get here so quickly? Today has been a good, weird kind of day. I made a chicken and mushroom stroganoff which was really tasty. We had it with buttered noodles. I’d never thought of using chicken for a stroganoff. It was a good idea for a couple of reasons. Firstly chicken is much cheaper than beef and second, it stayed lovely and tender without needing to be cooked long and slow. It was a winner and I will add it to my list of menu planning meals.
Yesterday I took the time to make some potato and sausage croquets. Actually they were more like patties really. I had some leftover potato and spinach mash and about five leftover sausages in the fridge. I sliced up and then chopped the sausages into small pieces and added them to the potato. There were also some lovely carmelised onions leftover too so I chopped those up and added them, along with some fresh thyme and paremesan cheese into the bowl. Next in were about three eggs, salt, pepper, garlic powder, onion powder and a smidge of chilli powder. I had some panko breadcrumbs in the pantry so I put some in and mixed everythimg to combine. I poured the rest of the breadcrumbs out onto a plate and started shaping my patties. once shaped and covered in breadcrumbs I just put them on a couple of pizza trays lined with baking paper and then into the fridge. Aboout 30 minutes later (you could leave them longer if you wanted to) I melted some butter along with some sunflower oil in a non-stick frying pan and cooked them for about 3 minutes each side. While I was doing that the oven had been heating up to about 150 degrees celcius. So basically just heat your oven up before you start pan frying 🙂 They turned out lovely and we had them with home made sweet potato wedges and some green peas. Not bad for a meal made out of bits and pieces!
What else happened today? Lots of playing together, must do more of that tomorrow. My sister in-law came for a visit and we had a cuppa together. A big delivery of books arrived and the kids were excited about that. We went for a walk to the little bridge and waterfall accross the road from us. Some Jehovahs Witnesses came to visit. They are really sweet ladies and I have two sets that come every other week. I’m not religious at all but I do like chatting with them and they are pretty nice humans. It doesn’t take much effort to be kind to people and it feels good too. I hadn’t read any news for a while so I had a quick look, I don’t want to get too bogged down with it all.
