Day 300! I can hardly believe it!! I’m starting to think about planning for my Christmas shopping. I love thinking about gifts for each person and what we will have to eat. Can’t wait to see my Mama. That’s actually the best part 🙂
Today was lovely. Lots of good conversations and smiles and I did some baking. I’m still using up my stewed apples. I made some vanilla cupcakes and after I spooned the batter into the patty pans, I dropped about a teaspoon of stewed apple into the centre. I thought a sprinkle of cinnamon sugar on the top would be a good addition as well. Then I baked them for about twenty five minutes at 180 degrees celsius, and then they were done. Delicious and a great way to use up a box cake mix.
For dinner we had roast chicken that had been marinated in lemon and garlic. I did a medley of roast vegetables in the oven. That was comprised of potatoes, sweet potatoes and onions with some garlic, salt and pepper that I had lightly coated in olive oil. I also had some fresh Brussels sprouts. I always do them boiled in a little water until tender, drain and them season with salt and pepper, finishing them with a couple of knobs of butter. When I did my for shop asparagus was on special so I got two bunches and as you can probably guess, we had them for dinner too! I just sautéed them in a little olive oil with some garlic and red peeper flakes and finished them with a little lemon juice. I took a couple of photos during preparation but forgot to take one of my plate because I was really hungry 😉 I am so grateful for food 🙂 I hope you have had a lovely Sunday. xo
